  • 2 lbs boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream or coconut milk for a dairy-free option
  • 1 cup sun-dried tomatoes chopped
  • 4 cloves garlic minced
  • 1 medium onion diced

  • 1 tsp thyme dried or fresh
  • 1 tsp oregano dried or fresh
  • 1/2 tsp red pepper flakes adjust to taste
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper freshly ground

Cooking Essentials

  • 2 tbsp olive oil for sautéing
  • 2 tbsp butter for richness

Garnish

  • 2 tbsp fresh parsley chopped
  • 1/4 cup Parmesan cheese grated (optional)

Instructions
 

  • Season the chicken with salt and pepper. Heat olive oil in a large pot over medium heat.
  • Sear the chicken on both sides until golden brown, about 3 minutes per side. Remove from the pot and set aside.
  • In the same pot, add butter, onions, and garlic. Sauté until fragrant and onions are translucent, about 3 minutes.
  • Add sun-dried tomatoes, thyme, oregano, and red pepper flakes. Stir well to combine the flavors.
  • Pour in the chicken broth and bring the soup to a simmer.
  • Return the seared chicken to the pot and let it simmer for 15-20 minutes, until tender and fully cooked.
  • Reduce heat to low, then stir in the heavy cream. Let the soup simmer for an additional 5 minutes.
  • Taste and adjust seasoning if needed. Garnish with fresh parsley and Parmesan cheese before serving.

Notes

For a thicker soup, mash a few pieces of cooked chicken or add a cornstarch slurry. Serve with crusty bread for an extra comforting meal.
